MERGUEZ AND TOMATO LINGUINE
Spicy merguez, harissa, and a simple tomato sauce, tossed with linguine. If you’re not familiar, merguez is a North African lamb (or beef) sausage seasoned with garlic, cumin, coriander and harissa — it brings a smoky, spicy kick that does most of the work here. Bold flavor, minimal effort.

MERGUEZ & TOMATO LINGUINE
Ingredients
- 350 merguez, cut into smaller pieces
- ½ onion, thinly sliced
- 1 tbsp tomato paste
- ½ tomato, diced
- ½ red bell pepper, diced
- 2 garlic cloves, minced
- Salt, pepper, paprika, cumin, to taste
- ⅔ cup water
- 24 tomato & basil sauce
- Harissa, to taste
- 16 oz linguine
Method
- In a hot pan, cook the merguez pieces without any oil for 7–10 minutes, until browned. Remove from the pan and set aside, then discard the excess oil left behind.
- Add the onion and tomato paste to the same pan and cook until the onion turns translucent.
- Mix in the diced tomato, bell pepper, garlic, and spices, and cook until the tomatoes soften.
- Add the water, tomato & basil sauce, harissa, and the merguez back into the pan. Stir to combine, cover, and simmer on medium-low heat for 20 minutes.
- Boil the linguine according to the package instructions, then fold it into the sauce and serve.
