SUÇUK PIDE
Turkish pide is one of my favorite comfort foods. With a soft, freshly baked crust, melty cheese, and savory sucuk, every bite is packed with flavor. It’s simple, delicious, and honestly, I’d pick it over regular pizza any day.

SUÇUK PIDE
Ingredients
- 320 mL water
- 7 g yeast
- 5 g sugar
- 25 mL olive oil
- 300 g bread flour
- 200 g AP flour
- 10 g salt
- Suçuk
- 8 oz kaşar, kashkaval or mozzarella
Method
- In a large bowl, dissolve the yeast and sugar in lukewarm water. Let sit for 5 minutes until foamy.
- Add in both flours, salt and olive oil and mix until a shaggy dough forms.
- Knead for 8–10 minutes until the dough is smooth and elastic. Cover the dough and let it rise in a warm place for 60–90 minutes, or until doubled in size.
- Preheat the oven to 500°F/ 260°C with a pizza stone (or large baking pan – bottom side up) inside for at least 30 minutes.
- Divide the dough into 5 equal pieces.
- Roll each piece into an oval shape (about 30x15cm) then place on a piece of parchment paper for easy transfer.
- Sprinkle shredded cheese evenly over each pide, leaving a border around the edges.
- Fold the edges slightly and pinch the ends to create a boat shape then lay suçuk slices on top of the cheese.
- Transfer the pide (with parchment) onto the hot pizza stone.
- Bake for 8–12 minutes, or until the crust is golden and crisp (remove parchment 2 minutes after).
- Brush the edges with melted butter.
- Cut and enjoy!
