SHAKSHUKA

Ingredients
  

  • 2 tbsp olive oil
  • 1/2 onion, diced
  • 1 tbsp tomato paste
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2 lb tomatoes, diced
  • 1/2 tsp salt
  • 1/2 tsp coriander
  • 1/2 tsp smoked paprika
  • red pepper flakes, optional
  • 1/4 tsp black pepper
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/4 cup water
  • 5 eggs
  • Fresh parsley, chopped
  • Feta, crumbled (optional)
  • Warm bread for serving

Method
 

  1. Heat oil in a pan over medium heat and add onions and tomato paste. Sauté until softened.
  2. Add garlic and spices and cook for 30 seconds until fragrant.
  3. Add tomatoes and bell peppers. Stir well and cook for 5 minutes.
  4. Pour in water, stir, and let the sauce simmer for 10-15 minutes, stirring occasionally until most of the liquid has evaporated
  5. Make small wells in the sauce and gently crack in the eggs. Reduce heat to low, cover, and cook for 6-8 minutes, or until the whites are set but yolks are still slightly runny.
  6. Sprinkle with fresh parsley and feta Serve with warm pita or crusty bread.
