Ingredients
- 1 tbsp oil
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 3 tbsp red curry paste
- 1 lb chicken thigh or breast, cut into bite-sized pieces
- 1 can coconut milk, full fat
- 1 red bell pepper, cut into strips
- ½ onion, thinly sliced
- Salt, pepper, cumin, paprika, chili powder, coriander, and cilantro, to taste
- Juice of 1 lime
Method
- Heat the oil in a pan over medium heat, then add the garlic and ginger, sautéing for about 2 minutes until fragrant.
- Stir in the chicken and red curry paste, cooking for 5 minutes while stirring occasionally to ensure even coating.
- Add the onion, bell pepper, and coconut milk, stirring to combine. Cover and let simmer for 20–25 minutes.
- Stir in the lime juice, adjust seasoning to taste, and serve hot with jasmine rice.
Notes
For a thicker consistency, mix ½ tsp cornstarch into the lime juice before stirring it in.
