This one’s a shortcut take on manti — same beefy, garlicky, saucy flavors as the real thing, minus hours of hand-folding tiny dumplings. Pasta stands in for the dough, but the payoff is identical: rich tomato butter, tangy garlic yogurt, and spiced beef in every bite.

Ingredients
  

  • 1 lb small pasta, bowtie, orzo, or similar, plus water for boiling
BEEF
  • 1 lb ground beef
  • ½ onion, small diced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin
  • 1 tsp paprika
  • Fresh parsley, chopped
SALÇA (TOMATO BUTTER)
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • Red pepper flakes, to taste
GARLIC YOGURT
  • 235 g Greek yogurt
  • 3 garlic cloves, minced
  • Salt, to taste

Method
 

  1. Bring a pot of water to a boil and cook the pasta until al dente. Drain and set aside.
  2. Mix the Greek yogurt with the minced garlic and salt to taste, set aside.
  3. Melt the butter in a pan, then add the olive oil and tomato paste, and mix well.
  4. Stir in the red pepper flakes and set aside
  5. In a pan, cook the onion until translucent.
  6. Add the ground beef and cook until browned.
  7. Stir in the salt, pepper, cumin, paprika, and parsley, and cook for a few more minutes.
  8. Add pasta to a bowl, top with ground beef, garlic yogurt and a drizzle of the tomato butter.
