SPINACH FETA EGG WHITE WRAP

This is my copycat take on the Starbucks wrap — minus the $5 price tag and the questionable toasting job. Same price gets you 4-5 wraps at home instead of one.

Ingredients

  • spinach, handful
  • 2 egg whites
  • feta, crumbled
  • cream cheese + sun dried tomatoes
  • 1 lavash bread
  • garlic, onion, salt, pepper

Method

  1. Heat olive oil in a small pan over medium heat. Add chopped spinach and cook until wilted (about 1 minute). Remove from the pan and set aside.
  2. Season egg whites with salt, pepper, garlic powder, and onion powder.
  3. In the same pan, pour in the egg whites. Cook, stirring gently, until set but still soft. Remove from heat.
  4. Spread the sun-dried tomato cream cheese on the lavash bread. Add the cooked egg whites, sautéed spinach, and crumbled feta cheese.
  5. Fold in the top and bottom edges of the lavash and roll it on itself. Place it in the oven (or toaster oven) seem side down and bake until crispy and golden brown OR cook in pan over medium heat.
